Every whisky distillery has its own tasting room. But at BUS Whisky, Proef Lokaal also stands for enjoying regional produce. In the Proeflokaal of BUS Whisky we serve a surprise menu. Dining at BUS Whisky means: regional produce, foraged ingredients, an organic wine list and enjoying everything from dry-aged beef to fully plant-based dishes, home-brewed beers and a view of the whisky distillery.

Experience an evening full of local flavours and choose the number of courses that suits your wishes. Let yourself be surprised by different courses. Every course is a dish crafted down to the finest detail by our chefs!

Whisky & wine pairing
For each course it's also possible to have a whisky or a wine, specially selected to be served with the dish. The wine arrangement is of course also available in an organic (BOB) variant. Don't drink alcohol at all? Then we have lovely mocktails and matching non-alcoholic drinks. We're happy to advise you on that too.

Naturally, all menus are also available in a vegan version, and we're happy to take gluten-free diets and other common dietary preferences or allergens into account.

Sustainable dining


Nose to tail

We work very closely with our suppliers and put together a menu every week based on their offerings. This lets us respond perfectly to the seasons and what mother nature provides. Our chefs go to the farm themselves to select a bull or cow that's slaughtered for us. We then process it 'nose to tail'. We try to use everything that comes from the land. We give value to products that would otherwise be unintentionally labelled as waste or by-products, for example by also using the peel or the pit. We process everything to minimise food waste and reduce our footprint. And our menu is entirely based on that principle.

Home-brewed drinks

Besides our own home-distilled whisky, most of the other drinks on our drinks menu are also brewed and bottled on our own farm. From home-brewed beers made from our own brewing barley and cider from our own apples, to self-bottled craft sodas. And not to forget the home-distilled eau-de-vie and homemade liqueurs made with fruit from our own food forest.

Food forest & vegetable garden

Our own food forest is a place where we largely let nature take its course. Many of our front-of-house staff regularly lend a helping hand in the food forest and vegetable garden themselves, and can therefore tell you plenty about it. How wonderful is it that our chefs can take a walk through the food forest in the morning, and that during this walk, creativity gives rise to new dishes that are already presented on our menu that same evening? That's our chefs' ambition, and we work hard on it.
