The cask: This whisky spent just over three years maturing in first fill bourbon casks. It then finished for a full two years in a Russian Imperial Stout cask, specially brewed by our own brewmaster for the BUS restaurant. Once the beer had had its time in the cask, the whisky took over — the result is a deep, dark complexity that brings brewery and distillery together in one glass. The label is based on Iron Ground, the artwork by Lisa Beckers that also graces the tube of our finish editions.
The tasting: Nose: pepper and chocolate, joined by almond and a subtle apple sweetness. Palate: nutmeg and a hint of anise, blending harmoniously with the chocolate and pepper from the nose. Finish: lightly dry, with bitter chocolate and liquorice.
The moment: A whisky for cold evenings — neat by the fireplace, or as a surprising companion to a dark beer or a dessert with pure chocolate.
